May 15

05-15
*Emergency Soup
Crisp Crackers
Salmon Box
Creamed Peas
Dinner Rolls
Dresden Sandwiches, Wine Sauce

In 1914 May 15 was a Friday.

The Salmon Box is an interesting presentation for leftover salmon. It’s quite literally a box made of rice and filled with cooked salmon.

April 30

04-30Oyster Soup
Oysterettes
Salmon Salad
Pimolas
Dinner Rolls
*Orange Pekoe Ice Cream
Angel Cake

In 1914 April 30 was a Thursday.

Pimolas are olives stuffed with pimiento. You know, what we usually find in a martini. I saw a suggestion that it was a portmanteau  of “pimiento” and “olive”

April 20

04-20

Cold Sliced Roast Veal
*Lyonnaise Potatoes
Dinner Rolls
Steamed Graham Pudding, Sherry Sauce

In 1914 April 20 was a Monday.

As is typical, we are having cold leftover meat from Sunday’s roast.

I like the pop corn garnish for the soup. It’s more fun than crackers!

April 15

04-15Oyster Stew
Oyster Crackers
Casserole of Beef
Dinner Rolls
Dressed Lettuce
*Stuffed Figs
Vanilla Coupe
Lady Fingers

In 1914 April 15 was a Wednesday.

I haven’t been able to find the recipe for Vanilla Coupe. Most of the other coupe recipes are fruit served in a coupe glass with an ice or ice cream and maybe some liqueur. I’m very curious about this one.

April 11

04-11

Vegetable Soup
Crisp Crackers
*Baked Eggs
Finger Rolls
Columbia Dressed Lettuce
Coffee Jelly with Whipped Cream
Nut Cookies

In 1914 April 11 was a Saturday.

The Baked Eggs are reminiscent of Florentine Eggs, on a bed of seasoned potatoes instead of spinach. “Rice milk” is a typo for “rich milk”.

April 1

04-01
Mock Bisque Soup
Croûtons
*Finnan Haddie, Caledonian Style
Dinner Rolls
Dressed Lettuce, Chiffonade
Lemon Meringue Pie
Cheese Squares

In 1914 April 1 was a Wednesday. The only April fooling I see on this menu is the Mock Bisque Soup. Probably a coincidence.

March 9

03-09

Scallop Cocktail
Cold Roast Beef à la Shapleigh
Potato Croquettes
Dinner Rolls
Fig Pudding, Wine Sauce
Crackers
Cheese
Café Noir

In 1914 March 9 was a Monday.

We’re having leftover roast beef from Sunday’s menu. Shapleigh is a town in Maine, but I don’t know why (or if) the roast beef dish is named after it.
